Hollywood, Venice Beach and Napa Valley might well spring to mind when you think of America’s hip and effortlessly glamorous Golden State. But don’t forget California’s restaurant scene, which made its mark back in the ’70s when US chef Alice Waters opened Chez Panisse in Berkeley, introducing a new focus on fresh, organic produce that has stood the test of time. Influenced by Latin American and Asian dishes and using seasonal ingredients from the region, this fusion cuisine is simple, unpretentious and makes a hero of seafood, fruit, vegetables and herbs – all thrown together in a medley of surprising combinations. Our summer-inspired creations will leave you California dreamin’ for sure.

Crab cakes

Freshly-caught local stone crabs are a menu staple in the Santa Barbara region and in cake format, are a popular finger food, accompanied by a spicy Asian remoulade and crispy salad. It’s a tasty protein-rich snack, California style.

Anyone who has visited the American Riviera will have fallen in love – with the sea, the mountains and of course, the Pacific coastline’s irresistible culinary specialties. How about tuna with garden vegetables, flowers and orange relish for love at first sight, or rather, bite?

The cows of Santa Rita Hills are famed for producing outstanding organic beef. Our version of the classic carpaccio combines the multicultural influences of Californian cuisine with Mediterranean charm, featuring cow, goat and sheep cheese, tomatoes and olive tapenade.

The Sunshine State’s Farmers Markets are legendary for their wonderful varieties of freshly-harvested vegetables. We combine a colourful bouquet of baby veg in refreshing lemon vinaigrette to complement glazed salmon, cooked to perfection at 80 degrees in olive oil.

You may be familiar with the sweet lemons of the Italian Amalfi coast, but did you know California remains ahead of Italy on the list of top 10 citrus-growing countries globally? It’s therefore only logical that our version of ‘lemon chicken’ has a zesty Californian twist.

In the foodie world, California is synonymous with passionate farmers who are committed to their animals’ well-being in order to sustainably and naturally produce the best quality meat possible. We crust our pink-baked lamb with fresh herbs and nestle it amongst flavourful bush beans.

Vegan lemon & avocado cheesecake

Every October, Carpinteria’s Avocado Festival attracts tens of thousands of foodies. They flock to the ocean-side city to sample every avocado creation imaginable, from guacamole and avocado beer to deliciously sweet desserts such as a vegan cheesecake with lemon and avocado curd.
